Kadma Winery is the only winery in the country that uses huge clay pots in its wine production process. The winery combines ancient technologies with up-to-date knowledge and renews winemaking technologies common in the Land of Israel in ancient times. It is located in the village of Uriah, halfway between Tel Aviv and Jerusalem.

Domaine du Castel is a family winery in the Judean mountains, near Jerusalem. We strive to make classic & elegenat wines from our unique terroir. Eli Ben Zaken, together with his three children, strive to make classic and elegant fine wines. The red wines, Grand Vin and Petit Castel, are both Bordeaux blends; aged in French oak barrels, they have an intense and complex bouquet. The palate is silky and rich with deep black fruit, spices and soft but assertive tannins. The finish is long, smooth and clean. The wines are unfined and unfiltered to fully preserve their flavors. They are well suited for aging and should reach their peak a few years after release. The "C" Blanc du Castel is a Chardonnay. The wine is aged sur lie for 12 months in the underground cellars. There is a frequent bâtonnage (stirring of the lees), a technique that enhances its complexity. The aroma is fruity with a hint of roasted almonds. The palate is rich and round with plenty of yellow tropical fruit and citrus. It is very well balanced and mouth coating. Domaine du Castel winery currently produces around 8000 cases annually. The Wine Advocate of Robert Parker, perhaps the most influential wine critics in the world, writes: "Domaine du Castel is one of Israel's most prestigious wineries, invariably on most short lists in the "best winery in Israel" debate … among the long established crown jewels."

Flam winery, established in 1998, is located at the heart of Martyrs' forest. From the very beginning Flam family was resolute on manufacturing wine that will best capture the unique flora characteristics of local agriculture. The winery is dedicated to maintaining values of sustainability and ecology, thus minimal intervention is practiced in handling the vines. And the family is in constant persuit of strengthening its ties to the area, investing in vineyards in Eben Sapphire, Giv'at Yesha'ayahu and Ein Carem. Golan Flam, the winemaker, deepens his exploration of the best suited grape varieties to the local terroir of the Judean hills. An area offering soil rich in minerals and agreeable Mediterranean weather. Golan, alongside his brother Gilad and their mother Camellia, are all dedicated to promoting a vision of precision and accuracy, being respectful of the ancient tradition of wine making in the Judean hills whilst maintaining their own unique signature thumbprint carrying the name Flam.

The Judean Hills rise sharply from the coastal plain and offer ideal conditions for growing exceptional fruit. The wines are produced solely from Tzora's own estate vineyards and express the quality and character of the Judean Hills terroir. We invite you to attend wine workshops, enjoy a thrilling experience of experiential explanations of the Ella Valley region, our vineyards, how to prepare the wine and the uniqueness of the winery. In the workshop you will learn how to taste wine, basic terms in the wine world, wine production process and more. Our doors are open for couples, as well as small or large groups. The visits to the winery are suitable both for private individuals who wish to get to know the world of wine, and for organized groups who are looking for a unique and multi-sensory experience. The workshops are conducted in Hebrew, Russian and English.
